Tillmann GURKA, BROT SOMMELIER from Freiburg im Breisgau

Germany is the country with the highest consumption of bread in Europe, and the market is rapidly transforming.

For many years now, the largest bakery school in Germany, located in Weinheim, has been offering a diploma training course to have the chance to be awarded the title of BROT SOMMELIER or Bread Sommelier.

This title, equal to that of a wine sommelier, requires intense work for one year, and represents 480 hours of training spread over a period of 10 to 11 months. Each Brod Sommelier must complete a specialised, scientific project related to bread/bakery/pastry products, requiring a thorough understanding of the material.

Our hero of the day: Tillmann GURKA, young baker in his thirties, who graduated as a BROT SOMMELIER in 2021. He is now the owner of his own bakery, a project that has been close to his heart for several years.

His main goal is to offer a limited but high quality assortment and to bake in front of his customers all day long, which is still a fairly recent trend in Germany. For his baguettes, he favours premium raw materials, in particular the flours of the Grands Moulins de Paris. Regarding the quality of production for his bakery, he has chosen Bongard equipment.

A bakery entirely equipped by BONGARD has opened since 17th February and is ready to welcome customers.
